魚眼睛是辨識任何一種魚類新鮮與否的關鍵,眼珠明亮、清澈飽滿就是首要條件;還能將秋刀魚的魚鰓微微打開,用鼻子近距離聞,正常會帶有淡淡的魚腥味與鹹鹹海水味,反之若是聞到惡臭味或是類似阿摩尼亞的味道,表示魚肉可能開始腐敗。
 Fish eyes are the key to distinguishing whether any fish is fresh or not. Bright, clear and full eyes are the first condition; you can also slightly open the gills of saury and smell them closely with your nose. Normally, there will be a faint fishy and salty smell. POINT 2 魚身完整且渾圓飽滿

從魚頭、魚肚到魚尾皆保持完整,勿挑選斷頭或斷尾的魚身,特別是在腹部需保持光澤度、紋路清晰且帶有些許鱗面藍綠點,魚肚越飽滿完整就表示肉質越鮮美、脂質佳。

可以輕輕觸碰秋刀魚表皮,若不新鮮或在常溫下放置過久,魚身會分泌出黏稠物質,則不建建議選購;反之保存得宜的秋刀魚表層會呈現光滑清爽。
